So today a giant urge to cook appeared and I just went for it. I think it was probably mostly that I looked at the menus at the dining halls and I really didn't feel like eating whatever crap they were trying to pass off as food, or the alternative salad and cereal. So not only did I cook dinner for tonight, I prepared dinner for tomorrow AND cooked a dessert. I'm awesome, I know.
So the first thing I did (after thawing out some chicken) was make a marinade for chicken to grill tomorrow for dinner. It is a mixture of soy sauce, beer, garlic and some spices. Now they are going to take a nice bath over night until I cook them up tomorrow.
So for dinner tonight I decided to make chicken chili. So first thing first, I thawed out the chicken and seasoned it. Then I dipped them in a mixture of flour and spices.
Next I melted some butter and oil in a pan and added the floured chicken to cook it up. It took about 20 minutes on low and covered the whole time. This way the chicken stays really juicy.
While the chicken was cooking I decided to make some brownies!!!! Yayyyyy!
Okay so the chicken is still cooking but its time to start up on the chili itself. This chili is pretty different but realllly easy to make and it is super delicious. So first thing is white beans and salsa, I usually use hot because I like spice, but I could only find medium :( Its okay... I had some spices to fix the heat! I added a bunch of cumin and some cayenne pepper.
Okay next is the cheese. Pepper jack to be exact. I love cheese, so I always add more than the recipe calls for. Also, I don't buy it shredded because its cheaper in the block, so I've got to chop it up myself.
And the chicken is done cooking! I just tear it up with my hands because I like is better shredded an cubed, so I just tore it into pieces and threw it into the chili.
And basically you just mix up the chili and let it sit on low heat for a few hours to let the flavors to mix together really really well and then it is ready to eat. This is what it will look like when it is done. So simple, but really so delicious. Usually I eat the chili with some ritz crackers but today I decided to make some cornbread because that sounded better. mmmmm.....
And then of course, there was the clean up. I wont show you the before picture, because I don't want to send any of you into a terrible dirty dishes induced depression, but here is the after picture. I ALSO took out the trash! Its been a big day.
And so I'm sure youre wondering... did I reward myself for the cooking and cleaning?
